Its no secret that both my kids have issues when it comes to food and eating. We struggle with eating veggies, working around the intolerance’s and getting variety in our meals. But I may have found a new way to sneak some veggies, added protein and make it all easy and simple for me!
What Is It? Egg Muffins
What Do you Need?
-Muffin Tin – Eggs or Egg Substitute
-Seasoning of choice ( I used Garlic Powder, Salt, Pepper, cayenne pepper for hubs) Cheese if desired, I suggest shredded cheese.
-I shredded some carrot and broccoli to add into the eggs and the kids had no idea!
–Beat the eggs and seasoning into a bowl. Then Pour into the muffin tins about 3/4 the way full as it DOES expand some. If you want, you can totally add in bacon or any other meats as well.
-I baked mine in the over at 375F for about 10-15 minutes. You can very clearly tell when they are done!
